Zoodle and Coodle Tomato Chicken

For anyone who has never used a Spiralizer before, you’re seriously missing out!

We’ve all heard of the latest veggie trend of ‘zoodles’ haven’t we? Zuccini noodles or ‘Courgetti’ in the UK are zuccini (courgette) noodles. The nifty contraption that is the Spiralizer slices the vegetable into either thick ribbons or thin noodles so that you can enjoy that Bolognese guilt free! At an affordable price, the Spiralizer is the new must-have kitchen gadget for a healthy lifestyle and I couldn’t agree more! I use a hand held Spiralizer from Zoodle Chef which unfortunately is now unavailable (boo) but this Four Blade Hand Held Vegetable Spiralizer is virtually the same; available here from Amazon. So now we know what the Spiralizer does and where they’re sold, let’s get onto the best bit: cooking with the Spiralizer!

This dish is super simple to make and perfect if you’re in a rush or just want a light meal with no carbs. I love experimenting with my food, so instead of just using Zuccini noodles, I also Spiralized a carrot and created what I like to call ‘coodles’ or carrot noodles). You can Spiralize with almost anything, as long as it fits in the Spiralizer and another favourite of mine is cucumber ribbons, so keep an eye out for the recipe for that dish! So, I give you: Zoodle and Coodle Tomato Chicken.

2 carrots

1 courgette

1 tin tomatoes

1 large chicken breast


1 Spiralizer (of course)


Using the Spiralizer, place the courgette into the noodle end of the gadget (there are two ends, one for fatter ribbons and one for thinner noodles), no need to peel the vegetables beforehand either. Twist the courgette into the Spiralizer so that thin noodles appear and repeat the process with the carrot. Grill the chicken in a George Foreman or similar grill as this is the healthiest way of cooking it! Whilst the chicken is cooking, place the zoodles and coodles into a steamer to lightly heat and cook them. In a saucepan, warm the tinned tomatoes on a low heat and stir continuously. When cooked, cut the chicken breast into small bitesize pieces and add into the saucepan of tinned tomatoes, mixing the two together. Take the vegetable noodles out of the steamer and add them to the chicken and tomato mix. Remove from the heat and serve in a bowl with a sprinkling of Parmesan.
