A Sunday well spent brings a week of content, and what’s a Sunday without a fry up? I’ve never been the sort to crave a fry up after a night out, but thought I would get experimenting with a gluten free, guilt free healthy fry up that I could indulge in after a Saturday night. Whether you’ve been out on the town or just fancy a breakfast that doesn’t consist of soggy cereal, this is the answer, and it doesn’t involve any frying – bonus!
Instead of frying my eggs, I poach them.Simply boil a saucepan full of water and crack the egg into the water. Leave for approximately 2 minutes (I like my yolks runny) and use a fish slice to scoop it out. If you don’t trust poaching an egg directly in a saucepan, you can purchase egg poacher pods which are super easy to use and even easier to clean! For the sausages, I’ve recently discovered Heck gluten free, low fat chicken sausages which I cook on my George Foreman fat reducing grill which is one of my best purchases. I’ve never been much of a baked beans fan, but adapted a recipe from my Deliciously Ella cookbook to make my own. Homemade baked beans gives them so much more flavour, and you can add in extras such as chilli flakes if you want to give them that extra kick!
1/2 tin three bean salad
1/2 tin of tinned tomatoes
1tbsp tomato puree
1/2 garlic clove
Pepper to taste
Drain the three bean salad and pour into a saucepan. Add the tinned tomatoes and turn the hob onto a low heat. Continue to stir until the tinned tomatoes begin to bubble. Add the garlic, tomato puree and season with pepper and stir until the mixture is combined and warmed through. Make sure it isn’t really watery and add more tomato puree if you need. Serve warm with the rest of your ‘fry up’ and any veg that you like!
