We’re all fans of the Nakd bars right? With no added sugar, these au natural raw fruit and nut snacks are not only healthy, but also wheat, dairy and gluten free and are perfect for a morning or afternoon pick-up. Wow, I know what you’re thinking, is there anything these guys haven’t got?
Nakd bars are available in pretty much every supermarket, and as a massive fan of the Cocoa Orange and Cashew Cookie flavours, with just five ingredients for one and only three in the other, I thought I would give a good go of making them myself. Using the ingredients proportions as a guide, I give you: Raw Fruit and Nut Bites. The results? I can’t tell the difference between mine and the Nakd version, but you decide.
Cashew Cookie (makes 6 balls)
51g Cashews
49g Dates
Dash of water
Method
Blend the cashews in a food processor until broken into fine crumbs. Add the dates blend to form a smooth paste, with the tiniest dash of water whilst the mixture is being blended. Take the mixture and roll into balls using the palms of your hands. Pop into a container and keep refrigerated.
Cocoa Orange (makes 6 balls)
40g Dates (I use medjool)
40g Cashews (unsalted)
14g Raisins
5g Raw cacao
Dash of fresh orange juice (straight from the fruit)
Method
Blend the cashews in a food processor until broken into fine crumbs. Add the dates and raisins and blitz again until a smooth paste. Add the raw cacao and blend until the powder is fully mixed in. Squeeze a dash of orange (I used 1 segment) as the mixture is being blended. Take the mixture and roll into balls using the palms of your hands. Pop into a container and keep refrigerated.
